Recipe: Mesquite Shortbread Cookies

Mesquite Beans

INGREDIENTS

3/4 cup whole wheat flour
3/4 cup butter, softened
1/2 cup mesquite flour*
1/4 cup walnuts or pecans
1/4 cup maple or agave syrup
1/8 cup ground flax seed
1/8 cup oat bran (you can substitute ground oats or spelt flour)
1 Pinch of salt

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients in a bowl.
  3. Incorporate wet ingredients.
  4. Make 1½-inch balls of dough, then flatten with a fork.
  5. Bake for 10-12 minutes on a greased cookie sheet.
  6. Let cool and enjoy with fresh berries and whipped cream, or maple or agave butter.
