Rock Shrimp Ceviche
Serves 20
Ceviche Ingredients
- 1 quart diced 5×5 tomatoes
- 1 quart diced cucumbers
- 1/4 cup diced Serrano chiles
- 1 cup diced red onion
- 1/2 cup lime juice
- 1 cup tomato water (blend tomato scraps and strain)
- 1/3 cup finely chopped cilantro
Mix ingredients together in a bowl, salt to taste.
Rock shrimp ingredients
- 5 lbs cleaned and chopped rock shrimp
- 1 quart lime juice
Marinate shrimp and lime juice for 30 minutes. Add shrimp to the ceviche, garnish with shaved mango and serve with fresh tortilla chips.
