Organic Recipe Inspiration for Fall

While we have officially entered the fall season, it’s safe to say that the weather in most parts of the country is still telling a different story. Fortunately, even if the season change isn’t as obvious outside, you can embrace the coziness of autumn in your own kitchen. Celebrate the beginning of fall the right way, with inspiration from Simply Organic’s healthy, pumpkin and cinnamon-infused snacks.

Pumpkin Spice Scones

Pumpkin-flavored anything is a staple of the fall season, and this treat is perfect for breakfast or a late afternoon snack. Start by preheating the oven to 400 degrees, lining a baking sheet with parchment paper, and whisking together a 1/2 cup pumpkin, egg, cream, molasses and vanilla extract in a large bowl. Next, combine flour, brown sugar, baking soda, salt and 3 teaspoons pumpkin spice in a food processor for about 20 minutes, until no lumps remain. Add butter and pulse until the mixture resembles a coarse meal with small chunks of butter. Add pumpkin mixture and pulse just until blended and sticky.

Lightly flour a countertop or work surface, and dump the sticky scone dough onto the floured surface. Using your hands, gently knead the dough until it comes together into a smooth ball. Divide the dough in half, dust your work surface with flour again, and form each half into a 5-inch circle, about 3/4 inch thick. Using a sharp knife dusted with flour, slice each circle into 6 even wedges (cut each circle in half, then cut each half into thirds). If the dough starts to stick to the knife, dust the knife with more flour. Place the wedges on the prepared baking sheet.

Finally, bake the scones for 12 to 15 minutes, until the bottoms are browned but not burnt. Let the scones cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Enjoy!

Coconut Pumpkin Granola with Cinnamon

This recipe features coconut flakes, pumpkin seeds, candied ginger, apricots, pistachios, oats and a number of other ingredients to make one of the simplest, most decadent fall snacks. Simply preheat oven to 350 degrees, line a baking pan with parchment paper,
and combine your main ingredients like cinnamon. cardamom and oats in a large bowl. Next, add pumpkin seeds, pistachios, candied ginger, dried apricots and coconut flakes. Drizzle melted coconut and honey over granola, and then spread the granola evenly on parchment-lined baking sheet in a single layer. Bake for 20 minutes, and once done and cooled, serve with fresh fruit, yogurt or milk.

Apple Pie Overnight Oats

This easy, ready-to-go breakfast features freshly chopped walnuts, apple, cinnamon and all-spice. Simply add almond milk, oats, chia seeds, maple syrup, allspice, cinnamon, vanilla and salt into a jar, and whisk to evenly combine the ingredients. Seal the jar and refrigerate for 2 to 3 hours until thick. And in a separate jar, combine the chopped apple and cinnamon. Then refrigerate that mixture overnight. In the morning, top the oats with the apple and walnut mixture, and enjoy!
