Recipes: Sorbet Pops

Blueberry Yogurt Pops

Ingredients:

1 1/2 cups water

1 1/2 cups sugar

3 cups Greek yogurt

1/2 lemon, juice and zest

1 Tsp blueberry puree

Directions:

  1. Pour water and sugar in a saucepan.
  2. Heat the ingredients until dissolved.
  3. Stir the simple syrup and place the saucepan over medium heat.
  4. By the time the edges start to simmer, the liquid should be completely clear, not cloudy.
  5. Immediately remove from the heat source.
  6. Once the syrup has cooled down completely, add all the ingredients along with the simple syrup to the blender.
  7. Place mixture into pop molds and freeze for 24 hours.

Yields 20 pops

Pineapple Kale Pops

Ingredients:

1 cup water

1 cup sugar

1/3 cup kale

2 1/2 cups fresh pineapple

Directions:

  1. Make simple sugar as mentioned in Blueberry Yogurt Pop recipe.
  2. Once the syrup has cooled down completely, add all the ingredients along with the simple syrup to the blender.
  3. Place mixture into pop molds and freeze for 24 hours.

Yields 18 pops

Strawberry Purple Basil Pop

Ingredients:

30 fresh strawberries

2 Tsp fresh lemon juice

1/2 Tbsp simple syrup

1 Tsp purple basil

Directions:

  1. Steep purple basil in the simple syrup, then cover with plastic.
  2. Once the purple basil simple syrup is cool, pour into blender and blend with the remaining ingredients.
  3. Strain the mixture through a chinois.
  4. Place mixture in pop molds and freeze for 24 hours.

Yields 16 pops
