Piccazzo’s Lemon-Zero Rita

Ingredients

  • 11/2 ounces non-alcoholic limoncello liqueur (available online or at specialty retailers)
  • 3⁄4 ounce lemon juice
  • 1 ounce simple syrup (recipe below)
  • 1 ounce soda water

Directions

Prep your glass by pouring 1⁄4 inch of granulated sugar onto a shallow plate slightly larger than the diameter of your glass. Rub a wedge of lemon around the rim of the glass, then dip the rim in sugar and twist around to make sure the entire rim is coated. Let the rim dry and fill the glass with ice.

Add ingredients into a cocktail shaker with ice. Shake well and strain into prepared glass. Garnish with lemon peel and lemon zest.

Simple Syrup

To make simple syrup, combine 1 cup water and 1 cup sugar in a saucepan and bring to a boil. Stir until sugar is dissolved – about 2-3 minutes. Let the syrup cool completely. Simple syrup can be stored in an airtight container in the fridge for up to 2 weeks.
