Jackie Alper’s Tomato-Basil Iced Tea

Brewed tea infused with muddled fresh basil and tomatoes tastes like summer in a glass.
The sweetness of the tomatoes, sharpness of the basil, and splash of apple cider balance the black tea’s tannins and add health benefits. Muddlers made with unvarnished hardwood or bamboo are eco-friendly and won’t scratch glassware.

Ingredients

5 cherry tomatoes, halved
5 fresh basil leaves
1 teaspoon apple cider vinegar
1 teaspoon sugar (optional)
8 to 12 ounces cold, brewed black iced tea
Ice for serving

Directions

Using an eco-friendly muddler, smash the cherry tomatoes and basil until the tomatoes have released their juice and seeds and the basil is well bruised. Stir in a teaspoon of apple cider vinegar and sugar (if using), top with brewed black iced tea, and add ice to fill.
