For decades, Christmas Eve in America has followed a familiar pattern: meat-heavy dinners, overflowing tables, and the idea that more automatically means better. As sustainability becomes part of everyday decision-making, however, many people are rethinking what meaningful holiday dining looks like. Increasingly, it looks lighter, more intentional, and rooted in tradition rather than excess.
One tradition quietly resurfacing for exactly these reasons is the Feast of the Seven Fishes.
Often referred to as La Vigilia, the Feast of the Seven Fishes is an Italian American Christmas Eve tradition shaped by the practice of abstaining from meat before Christmas Day. While meatless Christmas Eve meals are common across parts of Italy, the specific “Feast of the Seven Fishes” as it is known today developed largely within Italian American communities. Rather than centering on a single protein, the meal unfolds through multiple seafood dishes served slowly and shared communally.

That structure aligns naturally with more sustainable ways of eating. According to the United Nations Food and Agriculture Organization, red meat production is among the most resource-intensive components of the global food system, contributing significantly to greenhouse gas emissions and land use. By comparison, many seafood options, particularly shellfish such as mussels and clams, are widely recognized as lower-impact sources of protein when responsibly sourced, requiring fewer resources and producing fewer emissions. The World Resources Institute has also noted that reducing red meat consumption, even occasionally, can meaningfully lower an individual’s food-related environmental footprint.
The Feast of the Seven Fishes reflects those principles through variety rather than volume. Traditional menus often include dishes like calamari, shrimp, mussels, clams, baccalà, and octopus, prepared in smaller portions and designed to be shared. The abundance comes from diversity and pacing, not excess. While families may attribute personal or regional symbolism to certain dishes, the broader meaning of the feast lies in mindfulness, anticipation, and restraint.
Sustainability is not the only reason the tradition is resonating again. A recent national dining study found that 64% of diners are actively seeking global and heritage-based food experiences, reflecting a growing desire for meals that feel rooted in culture and storytelling. For many people, La Vigilia offers a way to connect with history while also aligning with modern values around conscious consumption.
“For us, the Feast of the Seven Fishes has never been about excess,” says Federico Venturini, co-founder of Pizzicata. “It’s about respect for the ingredients and for the people you’re sharing the table with. This tradition teaches you to slow down, to be intentional, and to celebrate without overdoing it.”
While La Vigilia has Catholic roots, the values behind it extend well beyond religion. The tradition has long been embraced by families and communities who appreciate its emphasis on mindfulness, connection, and shared experience.

In Arizona, where holiday dining often centers on familiar formats, the Feast of the Seven Fishes offers a thoughtful alternative. This Christmas Eve, the tradition will be served at Pizzicata’s various restaurant locations, allowing diners to experience La Vigilia as it was intended: seated at the table, shared communally, and treated as a complete ritual rather than a single special. Notably, the feast is offered only every other year, reinforcing its extremely intentional nature designed to slow people down and bring them together.
As conversations around sustainable living continue to shape how people celebrate, traditions like the Feast of the Seven Fishes offer a compelling reminder that responsible holiday dining is not a modern invention. It is a return to practices that value restraint, respect, and shared experience. By choosing seafood over meat and intention over excess, La Vigilia shows that celebrating well and living sustainably can coexist at the same table.
